A Savory Breakfast Choice.
Let us visit breakfast again today. It is not my favorite meal, but everyone says it’s super important ;)!
Breakfast and Dinner are both areas I seem to find challenging.
Since I went vegan, I wake up famished. Like, get up in the middle of the night for a handful of nuts kind of famished! Starving!
When I was in High School I went through a phase of chips and salsa for breakfast every day. I wouldn’t put it past me to choose last night’s lasagna or even a bean burrito for breakfast.

Here is what you will need:
3 large potatoes grated on a box grater ( I am sure a short cut could be the pre shredded bag in the fridge section)
2/3 of a can of rinsed black beans
2-3 sliced green onions (I didn’t have these, but wish I had)
3 tbs nutritional yeast
2 tbs flour
Salt and Pepper to taste (I used black salt)
*add any other veggies – maybe a chopped red pepper
- These seem to work best with a HOT waffle iron.
- Spray well with olive oil cooking spray.
- Mix all ingredients together and spread onto the super hot iron.
I made several with the heat on medium and they stuck! Hence the crummy photo. Don’t be fooled by the photo, even Travis and the kids approved.
I also found that if you spread this about 1/2-3/4” think, it works best.
I am sure everyone has a little different waffle iron. But, those hacks seemed to work best for mine!
Nutritional Yeast the BEST stuff ever! I buy the bags at Trader Joe’s. But, there are several brands. Sprouts carries Bragg’s. However you get this stuff, get lots! I had no clue that it could change my life for the better! It is has a cheese like scent and flavor. I hear many people use it as a seasoning in place of salt. More on that topic soon.
This waffle would go great with a tofu scramble… I will post my favorite recipe for that soon as well!
